Makes 1 8-inch chicken.
3-4 cups of beef broth (about 1.5 litres)
2 tablespoons of sugar
1-2 tablespoons of onion powder
3 tablespoons of garlic powder
1-2 tablespoons of chili powder
3 teaspoons of red peppers flakes
2 teaspoons of chilis (or more to taste)
2 tablespoons of olive oil
1/2 cup chopped onions
2 tablespoons of curry powder
3 tablespoons of lime juice
1-2 tablespoons of water
2 tablespoons of cilantro, finely chopped, or to taste
1/2 cup of chopped cilantro (or more to taste)
1 tablespoon of garam masala, optional (more or less you prefer, see here for other)
1/2 teaspoon of crushed red pepper flakes
1-2 tablespoon of cilantro, roughly chopped, optional
1/2 teaspoon of salt
To make: Boil water, sugar, onion powder, salt, chili powder and cilantro in large pot for a while. Slowly pour in hot broth to soften. Add onions, curry powder, lime juice, and water to soften.
Serves 8-10, depending on size of the chicken.
Tips: Do not throw off, or undercook the carrots, onions, chicken, and cilantro by adding too much cilantro.
If you want to make this into a larger dish, I find it’s easier to make a larger pot of broth when it’s in liquid. Just add more water as needed.
